Since it’s Friday, I’ll set aside Part II of my Reality Check post to share with you two of my favorite things at the moment.  The first is a video from my friend, Hannah (queen of finding silly, funny videos on youtube) second, my Pumkin Pie Muffin recipe inspired by Elana’s Panty, and a special surprise at the end.
I hope you find this video as hilarious as I did. It made me laugh so hard I cried.  And make sure you have the volume turned up; that’s what makes it great!
All joking aside, here’s the story behind the kittens: “charlie and spike are two kittens with myotonia congenita, otherwise known as ‘fainting goat’ syndrome. at the slightest sound, the kittens respond by collapsing and falling into a rigid paralysis which lasts about a minute before they return to normal.”
And now, for a holiday treat….Pumpkin Pie Muffins that are completely Gluten Free.
The original recipe can be found here.  Below is how I made them.
Ingredients
1 ½ cups blanched almond flour
¼ teaspoon celtic sea salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger (I omitted this)
1 pinch ground cloves
2 tablespoons grapeseed oil
½ cup agave nectar (used 1/4 c. agave nectar, and 1/4 c. of homegrown (?) honey my client gave me instead)
2 large eggs
1 cup Organic Pumpkin **(different from Pumpkin Pie filling)
Steps:
1.In a large bowl combine almond flour, salt, baking soda, cinnamon, nutmeg, and cloves
2. In a high powered blender ( I used my KitchenAid Mixer) puree oil, agave (honey), eggs and pumpkin until smooth
3.Stir wet ingredients into dry
4.Place paper liners in cupcake pan
5.Scoop batter into paper liners
6.Bake at 350° for 40-45 minutes
7.Cool for 2-3 hours
8.Serve
The thing I love about Elana’s recipes compared to other Gluten Free recipes I have seen is the short list of ingredients.  A lot of other recipes I’ve researched use brown sugar, white sugar, this flour, that flour, etc. etc. etc.  I feel like all her recipes are simple and use the same main ingredients. All you have to do is buy the stuff once and then you have enough left so that next time you don’t have to get anything new!
