Sweet potatoes and spinach go together like Popeye and Olive Oyl. This recipe is one of my favorite side dishes. It’s super easy to make and a great way to get in veggies for you and the little competitors you may be feeding.


Total Prep & Cook Time: ~30 min

Utensils: stovetop pot, knife, cutting board, teaspoon, colander, food processor or mixer, and spatula


2 medium to large sweet potatoes

2 cups raw spinach

2 teaspoons of ghee

salt and pepper as desired


  1. Cut sweet potatoes (leave skin on) in cubes. Place in a stovetop pot and cover with water. Set to boil on high for about 8-10 minutes or until you can easily poke through potatoes with a fork.
  1. Once potatoes are finished boiling, drain the water out using a colander over the sink.
  1. Layer spinach and sweet potatoes in food processor. Process for a few minutes, scrape down the sides and repeat until the spinach is finely processed and potatoes reach desired consistency. Add 2 tsp of ghee and desired amount of salt and pepper and process another 30-60 seconds.
  1. Serve alongside your favorite protein.


Optional add-ins: For a more spicy sweet potato recipe add chipotle chili powder, garlic and cumin. Garnish with bacon or chives for added flavor and presentation.
