As many of you already know, Valentine’s Day is one of my favorite holidays because it’s the day before my birthday; which usually means I get double the good stuff! And what’s not to love about the day that’s all about L-O-V-E!?

I wanted to come up with a decadent, chocolate recipe that is not only delicious but allergy-friendly. I try to avoid gluten, soy and eggs when possible because I am intolerant and without them in my diet I feel so much better than when they are present. Typically I search for Paleo recipes for ideas, but more often than not they contain 2-6 eggs which is no bueno for me. So, I came up with my own recipe that can also be used as a Valentine’s gift for your kids’ teachers, friends, clients, etc. I wouldn’t recommend giving just this to your significant unless it’s paired with some Kendra Scott earrings or a massage 😉

Triple Chocolate Cherry Mason Jar Cakes with Chocolate Ganache Icing


Serves: ~10 (4 oz mason jars) You can make them in shifts or buy all 10. I only bought 4. You can also make this into a bunt cake.


½ cup coconut flour

½ cup Bob’s Red Mill 1-1 Gluten Free Flour

½ cup coconut sugar

½ cup unsweetened cocoa powder

½ teaspoon baking soda

½ teaspoon baking powder

2 Tbsp ground chia seeds + 6 Tbsp Water (flax “egg”)

1 cup applesauce

½ cup melted coconut oil

¼ cup Chameleon Cold Brew Mocha coffee

¼ cup non-dairy milk (I used hemp milk)

1 teaspoon vanilla extract

½ cup Enjoy Life dark chocolate chips

½  cup frozen dark cherries (sliced)


Preheat oven to 350 degrees

Prepare 4 oz mason jars with coconut/grapeseed oil spray

Set aside 2 Tbsp ground flax seeds + 6 Tbsp water in a small bowl for about 5 min

Mix together all dry ingredients in a bowl: coconut flour, gluten free flour, coconut sugar, cocoa powder, baking soda and baking powder

In a large bowl, whisk together “flax eggs”, applesauce, coconut oil, cold brew coffee, non-dairy milk, and vanilla extract.

Add dry ingredient to wet ingredient and mix together until well mixed

Fold in dark chocolate chips and fresh cherries

Use large ice cream/muffin scoop to pour batter into prepared mason 4 oz mason jars

Bake for 25 minutes or until toothpick comes out dry after inserted in the center.

Let cakes cool and prepare chocolate ganache.

Chocolate Ganache Icing

(recipe adapted from Elana’s Pantry)

3 oz. Enjoy Life chocolate chunks

¼ cup unsweetened vanilla hemp milk (or any other non-dairy milk)

½ scoop Metabolic Effect craving cocoa *or ½ Tbsp of unsweetened cococa

Combine all ingredients in a pot over low. Stir continuously until it has melted and is smooth. Remove from heat, spoon and spread over individual jar cakes. Icing will harden after about 20 minutes or eat it immediately for a “molten lava cake effect”.
